Chocolate Cheesecake Bars and Lemonade Party Cake

Chocolate Cheesecake Bars ~ oh, these are heavenly!!

Chocolate Cheesecake Bars

Crust
1 1/2 cups graham cracker crumbs
3 Tablespoons sugar
6 Tablespoons melted butter

Mix cookies and sugar together.
Add butter and stir until combined.
Press mixture into a 13 X 9 pan.
Cheesecake
3 (8 oz.) packages cream cheese, softened
1 cup sugar
2 Tablespoons flour
3 eggs
8 oz. sour cream
1 Tablespoon vanilla

Preheat oven to 325 degrees.
Cream the sugar, cream cheese, and flour with an electric mixer on medium until light and fluffy.
On medium low, add eggs one at a time, mixing well with each addition.
Add sour cream and vanilla and mix until just combined.
Pour on prepared crust and bake for about 45 minutes.
Remove and cool.
Prepare ganache.

Chocolate Ganache8 oz. heavy whipping cream
2 oz. butter
1 cup milk chocolate chips
1/4 cup confectioners’ sugar

Heat cream and butter on stove until just before boiling.
Remove from stove and pour over chocolate. Stir until completely combined.
Add confectioners’ sugar and beat with a wire whisk until combined and smooth.
Pour over cooled cheesecake.
Cover and refrigerate overnight.
Cut into bars and serve.
Makes about 30 bars.

Lemonade Party Cake
Bake a lemon cake
Cool; poke holes
Pour mixture over top of cake
Put icing or cool whip on top
Enjoy!!
1.  Recipe:
1 lemon cake mix
Bake cake as directed on box
2.  Mixture to pour over cooled cake:
1 ~ 6 oz. frozen lemonade concentrate, thawed
3/4 cup powdered sugar
Mix lemonade concentrate and powdered sugar. Pierce top of warm cake every 1/2 inch with long-tined fork, wiping fork occasionally to reduce sticking. Drizzle lemonade mixture evenly over top of cake. Run knife around sides of pan to loosen cake. Cover and refrigerate about 2 hours or until chilled.
3.  You can use a container of white icing.
NOTE:  When I made the cake I used icing, but it was way to sickening sweet.  The next time I bake this delicious cake I'm going to use cool whip instead.  That will help to make it less sweet!!  It is very, very good and soooooooo good!!!
