Chicken Casserole

Here is a delicious casserole that Dennis loves for me to make, but it's too much for only the two of us.  So, when we get company sometimes I'll make it.  It's really simple ~ just a little time consuming but not too bad!  Here's the easy directions:

Fill a dutch oven pan at least half to three fourth full of water.  Add 4 or 5 chicken bouillon cubes or packets of bouillon powder.  I used sodium~free.
I use boneless, skinless chicken breasts.
Put the chicken breasts in the pan and boil
Take chicken out of water to cool enough to work with

Spray a large size casserole dish with Pam
Cut up chicken into small bite size pieces
Don't throw out the broth that you boiled the chicken in.  Set it aside.
Mix cream of chicken and cream of mushroom soups together well
 Gently stir in the pieces of chicken; coat well
Place this mixture in the casserole dish
 Put one stick of butter in the chicken broth and bring to a boil 
Add stove top dressing
Put the stove top dressing on top of the chicken mixture

CHICKEN CASSEROLE
4 large boneless, skinless chicken breasts
1 can cream of mushroom soup
1 can cream of chicken soup
2 packs of Stove Top Dressing
4 or 5 chicken bouillon cubes

Boil chicken breast in a large Dutch Oven pan for approximately 20 minutes; add chicken bouillon cubes while boiling.  Remove chicken from water to cool enough to handle.  Set chicken broth aside for now as you will use this.  Cut up chicken into bite size pieces.  Spray large casserole dish with Pam.  In large bowl mix cream of mushroom and cream of chicken soups.  Spread this mixture in bottom of casserole dish.  Set aside.  Make the Stove Top Dressing according to directions on the box.  Gently put the Stove Top Dressing on top of the chicken mixture.  The dressing may be very wet, but that's okay.  Cover and bake at 350 degrees for 30 ~ 35 minutes.  The last 5 minutes bake uncovered.
Note:  You may also add some chopped celery and onion to the dressing for added taste.
