Delicious Curry Chicken and Rice Casserole

We've had company for almost a week and when I came across this recipe a few weeks ago, I knew I was going to make it for today's Sunday dinner.  It looks delicious and I can't wait to try it in just a little while!
~     ~     ~     ~     ~
Saute a chopped onion in a small amount of oil
Chop up broccoli
Cook some chicken; when cool cut~up
Add broccoli and chicken to onion
More ingredients needed
Mix salad dressing (mayo), curry and cream of mushroom soup
Cook the rice
Spray casserole dish with cooking spray and add the mixture 

RECIPE
1 cup rice
2 cups water
1 can cream of mushroom soup
1/2 cup mayo or salad dressing
2 tablespoons curry
1 onion, chopped
2 cups chicken
2 cups fresh broccoli
grated cheddar cheese

1.  Cook rice in 2 cups water according to directions on box
(I used the Original Minute Rice)
2.  Saute onion in oil
3.  Add broccoli and chicken to onion in pan
4.  In a bowl combine soup, mayo and curry; stir
5.  Add soup mixture to broccoli/chicken mixture and mix well.
6.  Spray casserole dish with cooking spray and put mixture in the dish.
7.  Cover with grated cheddar cheese
8.  Bake at 350 degrees for 35 ~ 40 minutes, covered or until heated through.  Take the lid off casserole dish the last 10 minutes.

The original recipe says it serves 4 ~ 6 people.  But I can't see how unless they eat very, very small portions.  So, I doubled the recipe and will be feeding 6 people.  I'm hoping not to have any leftovers :o)  Also, Dennis isn't a fan of curry, so I only added about 1 tablespoon to the doubled portion.  Hopefully, it will still have a taste of the curry.

Another Scrumptious Dessert

Sugar~Free/Low Sugar Strawberry Pie Dessert
~     ~     ~     ~     ~
It's super easy and has just a few ingredients!
Sugar~Free Strawberry Jello
Strawberries
Cream cheese and Equal
A graham cracker or baked pie crust
Cream cheese, Equal and cool whip
Sliced strawberries in thickened jello
Pour in pie crust

RECIPE
Use either a Graham Cracker Crust or a baked pie crust

Strawberry Jello
1 qt. strawberries, hulled and washed, sliced

First, make the strawberry Jello using 1 cup boiling water.  Add 1 cup of ice cubes to cool it faster.  I set mine in the freezer for a few minutes to get it even thicker, but not totally set!  Gently stir in sliced strawberries; set aside.

FIRST LAYER
3/4 tub of Cool Whip
8 oz Cream Cheese, softened
8 pks of Equal
(the original recipe calls for 10 pks of Sweet & Low, but we don't have that.  I used only 8 pks of Equal because 10 seemed like way too much and it is plenty sweet as I tried that batter!)
Mix all three ingredients together until real creamy and smooth.  Spread in the bottom of pie crust.

SECOND LAYER
Carefully pour Jello with strawberries over the cream cheese mixture.

This is the first time I made this recipe!  There is way too much jello/strawberry mixture and will not fit in a regular size graham cracker crust.  Next time I make this I will probably bake a regular pie crust in a larger/deeper pie dish.  The left over cool whip will be placed on top of each slice when I serve it to my company!

Black Bottom Cake/Cupcakes

This has to be one of my many favorite cakes :o)  I love this!!  It's so yummy and moist.  When we were pastoring at our first Church in PA, a very good friend of mine, Margie Young, gave me this recipe.  She was such a wonderful cook.

After mixing the chocolate part of the cake and pouring it in the pan you spread around the chocolate chip cream cheese mixture.
After the cake is cooled you put that delicious homemade Cream Cheese Icing on top!
And then you cut it and indulge!!!  This is another one of those goodies that doesn't have any calories!!  hahahaha!!  With all the cream cheese in the cake and icing there are 1200 calories alone without any of the other ingredients.  Oh, no!!!  But that doesn't lessen the goodness of it!!

Recipe for Black Buttom Cake/Cupcakes

Cream cheese filling
8 oz. cream cheese, softened
1 egg
1/3 cup sugar
1/8 teaspoon salt
1 ~ 12 oz. bag chocolate chips

Mix the first four ingredients together well.  Stir in chocolate chips.  Set aside.

Cake part
1 1/2 cup flour
1 cup sugar
1/4 cup cocoa
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup oil
1 teaspoon vanilla
1 tablespoon vinegar

Put flour, sugar, cocoa, salt and baking soda together in a bowl.  Stir.  Add 1 cup water, oil, vanilla and vinegar.  Mix together well.  If you want to make this into a cake, spray a 9 x 13 baking pan.  Pour chocolate batter into pan.  Then take the cream cheese filling mixture and put dabs of it around the cake batter.  Bake at 350 degrees for 35 ~ 40 minutes or until done.  Cool cake; put icing (recipe below) on cake and enjoy!!  OR if you want to make into cupcakes, fill cupcake papers 1/2 full of chocolate cake batter and put a teaspoonful of the cream cheese filling on top.  Bake at 350 degrees for 10 minutes or until done.

Cream Cheese Icing
12 oz cream cheese, softened
4 tablespoons butter, softened
1 1/2 cup confectioner's sugar
pinch of salt

Combine cream cheese and butter; mix until creamy.  Add confectioner's sugar and salt; mix well.  Carefully put icing on cake ~ and don't eat too much of it as it is super sweet :o)  Enjoy!!
